A restaurant calls us because the canopy is not pulling. Smoke hangs in the kitchen, the dining room smells of frying and the chefs are working badly. And nearly always the problem is not the canopy. It is that there is no make-up air.
A canopy extracts a large volume of air. If that air is not coming in from somewhere, the premises go into negative pressure: like sucking on a sealed bottle. Then three things happen that every restaurateur recognises.
Doors become hard to open or slam shut. The canopy is loud and pulls very little. And air comes in wherever it can — through the drains, the toilets, the front door — dragging smells from the wrong place into the dining room.
The answer is not a bigger motor, which is what usually gets fitted. It is bringing in the right volume of make-up air, in the right place, and tempered if needed so you do not have a cold draught over the line.
Kitchen extract ductwork builds up grease on its walls. That is unavoidable. And that grease is fuel.
A fire that starts in a canopy and finds a dirty duct travels up it to roof level and spreads inside the building, where nobody can see it and where it cannot easily be put out.
That is why two things matter that get skipped when people are cutting costs: access panels along the run, without which cleaning the duct internally is impossible; and the material and the quality of the joints, because kitchen extract ductwork is made in stainless steel and ordinary galvanised is not the material for the job.
Discharge to roof level. In most Mallorcan municipalities, local regulations require kitchen fumes to be carried to the roof of the building, above windows and neighbours. Discharging into a courtyard or onto the facade is not accepted.
That shapes the whole installation: you have to find a route for the duct to rise, negotiate it with the owners association if the building is residential, and sometimes resolve the passage through common areas. It is one of the commonest reasons a premises opening gets delayed, so it is worth checking before you sign a lease, not after.
For hotels the work is another scale altogether: several sections, buffet, still room, dishwash and cold rooms, each with its own extract and make-up requirements. We work in the low season, November to March, when the hotel is closed and the work can be done without affecting service.

Often not. Before changing anything you have to check whether enough air is coming into the kitchen, what condition the duct is in internally and whether the fan is correctly sized for the run it has. Replacing the canopy without checking that is spending money to end up where you started.
In most Mallorcan municipalities, yes. Fumes cannot be discharged into a courtyard or onto the facade at window level. The detail varies by town hall and by what the building association allows, and it is checked case by case.
Before you sign the lease, if you can. The fume extraction route is one of the commonest reasons a premises turns out to be unusable for catering, or why an opening is delayed by months. One visit before signing can save you an expensive problem.

Stainless steel. Kitchen extract involves grease, heat and moisture, and galvanised is not the right material for that. Elsewhere in the installation, depending on where it runs, galvanised can be used.
It depends on the job. Some things can be done overnight or on the closing day, others cannot. We plan it with you so you lose as few services as possible.
